The health crisis and repeated lockdowns have given rise to new consumption habits, where "local consumption" has quickly become a priority in the choice of consumer purchases.

Local products represent a market of roughly forty billion euros, part of it under official labels such as PDO, PGI and Label Rouge. Yet there is no regulatory definition of what counts as locally produced, which leaves retailers and consumers to interpret the term.
Meeting that demand means sourcing from many small suppliers instead of a few large ones — a purchasing and logistics challenge before it is a marketing one.
